The Vada Pav is one of the most famous street foods in South Asia. In Mumbai (the capital of Maharashra), you cannot go two blocks without running into one of these stalls. Mumbai and the Vada Pav would be analagous to NYC and its hot dogs or Berlin with its doner kebab. Given the immense popularity of this dish, I had to pick Vada Pav. The "vada" is pronounced as "vuhduh" and "pav" is pronouced as "pao". "Vada" refers to the potato filled cutlet in the middle similar to a patty in a burger. The "pav" refers to the bread placed on both sides of the vada. Due to its similarity to western-styled Burgers, most have called it the Mumbai Burger due to its immense popularity in that city. The popular street food is often served with a full green chili pepper on the side, added spices to use as garnish, and several types of Indian sauces known as chutneys. If you have a low tolerance for spices, I recommend that you pass on the green chili pepper, spices, and chutney. However, I know most of you reading this will not listen to me, so heed these words. When taking a bite of the vada or chili, to counteract that spice take a big bite of the pav. The flavors are supposed to contrast with each other and create a painting in your mouth.
