Punjabi: Dal Makhani

Dal Makhani is an iconic dish from the South Asian heartland of Punjab (pronounced "Puhnjahb"). The soil in this region is extremely fertile; as a result agriculture flourished and continues to flourish there today. Punjab is also home to a strong vegetarian culture. The dish that I thought best reflected this was Dal Makhani. The dish was made popular by the same restaurant that popularized Murg Makhani. Part of what makes this dish so popular is its versatility; it can be served as a main dish or as a side dish. "Dal" is pronounced as "daal" and means lentil, while "makhani" is pronounced as "muhkuhnee" and means butter. The dish is essentially a South Asian lentil soup and is served with either rice or a flatbread. The soup is made with two types of lentils; they are black lentils and red kidney beans, a mix of spices, butter, and of course water. This dish takes a lot of preparation, patience, and hard work. I guarantee that the end product makes all worth it.
