How to make biryani
Biryani is colorful rice with vegetables
Rice
ingredients
- 3 cups long white rice
- 8 teaspoons peparika powder
- salt
- 20-25 stems coriander
- 20-25 spinich leaves
- 1/2 cup water
Vegetable briyani sauce
- 8-10 peeled plum tomatoes
- 1 cup of mixed colored bell peppers finaly diced
- 2-3 baby corn sliced into fined discs
- 3 tabelspoons homade tomato puree
- 2 teaspoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon finely chopped chilli
- 2 teaspoons salt
- 1 teaspoon sugar
- 2 teaspoons lemon juice
- 1 teaspoon ground coriander and cumin seeds
- 1 teaspoon cinnamon powder ginger to taste
- 2 cups died potatoes oil for frying
- 5-10 stems of finely chopped coriander
Colored rice
- divide the rice cups into 3 equal porportions(1 cup per portion) and leave to boil in 3 pots
- Add 1/2 teaspoon salt to eack pot
- As the first pot is comming to boil add the peprika powder and leave to boil on medium heat
- Wask and throughly chop the spinich leaves and corinder.
- Add water as needed to blen into a thick puree. You can leave small bits of spinich in the puree to enchange the color of the final product
- Add this puree to the secound pot of rice just before it comes to a boil
- Leave the third pot as it is
- Strain all 3 pots seperately once the rice has cooked and leave to cook throughly
Vegetable biryani sauce
- Deep fry the potatoes until they are golden brown and leave to strain
- On a mediun heat, add the oil in a pot and add the cumin seeds and chillies and stir for 30 secounds.
- Once the cumin seeds have started to pop, prepare to add fried potatoes, Peppers, and baby corn and stir for 2 minutes. Turn down the heat if required
- Add in the tomatoes and tomato puree
- Once the sauce has come to boil add in salt, sugar, ginger, lemon juice, cinnamon powder, ground corrinder, and cumin seeds
- Turn the heat down to a minimum and stir occasionally. The sauce will thicken slowely
- Add the freshly chopped corrinder
Assembling
- Grease a plastic cylinder with a minimum diameter of 10cm and height of 10cm
- Place 3tbsp of paprika rice in the cylinder and press it down. Make sure it does not take up more then 1/3 of the cylnder. Add more paprika if required and press down. NOTE: if the rice is too red or dark orange, rince it quickly and gently under the tap for 5 sec to give the rice more of n orange colour
- Add in 3tbsp of wjite rice and press down ensure you hve 1/3 of the cylinder left for the green rice
- Repeat all 3 steps with the green rice
- Cover the cylinder and rest for 5 minutes. Serve the Biryani sauce in a bowl
